Golden Herb & Garlic Vegan Yeast Rolls

These Golden Herb & Garlic Vegan Yeast Rolls are incredibly soft, pillowy, and tender. Made without soy, dairy, or commercial eggs, this recipe relies on warm oat milk (or almond milk), extra virgin olive oil, and a touch of date syrup to feed the yeast and achieve an airy, golden pull-apart crumb.

Ingredients

Yeast & Liquids

  • 1 cup (240ml) warm plain oat milk or almond milk (105°F–110°F)
  • 2 1/4 tsp (1 packet / 7g) instant or active dry yeast
  • 2 tbsp Medjool date syrup or agave nectar
  • 3 tbsp extra virgin olive oil

Dough & Dry Base

  • 3 to 3 1/4 cups (360g–390g) unbleached bread flour or all-purpose flour
  • 1 tbsp vital wheat gluten (optional, for extra fluffiness)
  • 1 tsp fine sea salt

Herb & Garlic Finishing Wash

  • 2 tbsp extra virgin olive oil (divided)
  • 1 tsp date syrup (mixed with 1 tbsp oil for pre-bake glaze)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley or thyme
  • Pinch of flaky sea salt

Step-by-Step Instructions

  • Activate Yeast: Whisk warm oat milk, date syrup, and yeast in a bowl. Let sit for 5 minutes until frothy.
  • Mix Dough: Stir in 3 tbsp olive oil, fine sea salt, vital wheat gluten, and 2 1/2 cups flour. Gradually add remaining flour (2 tbsp at a time) until a soft dough ball forms.
  • Knead: Knead by hand or mixer for 6–8 minutes until smooth and elastic.
  • First Rise: Place dough in a oiled bowl, cover with a damp cloth, and let rise in a warm spot for 60 minutes (until doubled in size).
  • Shape Rolls: Lightly oil an 8x11 or 9x13-inch pan. Punch down dough, divide into 12 equal pieces, roll each into a tight ball, and place in the pan.
  • Second Rise: Cover pan loosely and let rise for 35–45 minutes until puffy and touching. Preheat oven to 375°F (190°C).
  • Glaze & Bake: Whisk 1 tbsp olive oil with 1 tsp date syrup. Brush gently over the tops. Bake for 18–22 minutes until golden brown.
  • Finish & Serve: Mix remaining 1 tbsp olive oil with garlic powder, dried herbs, and sea salt. Brush over hot rolls immediately after taking them out of the oven. Enjoy!
