Grilled Vegan BBQ Pulled Jackfruit Sandwiches
This recipe uses shredded jackfruit as a tender, chewy base, which is simmered in a smoky sauce and then finished on the grill for deep flavor and texture.
INGREDIENTS
A. Jackfruit Prep
- 2 cans (20 oz each) Young Green Jackfruit in Brine or Water, rinsed, drained, and shredded
- 1 tbsp Extra-Virgin Olive Oil
- 1/2 medium Red Onion, diced
- 2 cloves Garlic, minced
B. Smoky BBQ Sauce
- 1 cup Organic Ketchup
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Brown Sugar or Maple Syrup
- 2 Tbsp Molasses
- 1 tbsp Vegan Worcestershire Sauce
- 1 tbsp Smoked Paprika (essential for smoke flavor)
- 1 tsp Chili Powder
- 1/2 tsp Liquid Smoke (optional, but highly recommended for grill flavor)
C. Assembly
- 6-8 Vegan Hamburger Buns, toasted
- Vegan Coleslaw (optional, but recommended for crunch)
- Dill Pickle Slices (optional)
INSTRUCTIONS
STEP 1: PREPARE AND SHRED JACKFRUIT
- Rinse and Shred: Drain the canned jackfruit well. Use your fingers to tear the large chunks into shreds, discarding any hard, triangular core pieces.
- Sauté: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 5 minutes until soft. Add the garlic and cook for 1 minute.
- Simmer Jackfruit: Add the shredded jackfruit to the skillet and sauté for 5 minutes to remove excess moisture.
STEP 2: MAKE AND ADD BBQ SAUCE
- Mix Sauce: In a medium bowl, whisk together all the BBQ sauce ingredients: ketchup, apple cider vinegar, brown sugar/maple syrup, molasses, vegan Worcestershire, smoked paprika, chili powder, and liquid smoke (if using).
- Combine: Pour about 3/4 of the sauce over the jackfruit and stir well to coat. Reserve the remaining sauce for glazing/serving.
- Simmer: Reduce the heat to low and simmer, uncovered, for 15-20 minutes, stirring occasionally, until the jackfruit has fully absorbed the sauce and the mixture is thick.
STEP 3: GRILL AND ASSEMBLE
- Preheat Grill: Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grates.
- Grill Jackfruit: Spread the sauced jackfruit mixture evenly across a sheet of heavy-duty foil or place directly in a grill basket. Cook for 5-7 minutes, stirring occasionally, until the jackfruit edges are slightly charred and crispy.
- Glaze: Brush the pulled jackfruit with some of the reserved BBQ sauce during the last minute of grilling.
- Assemble: Pile the warm, smoky BBQ jackfruit onto toasted vegan buns. Top with crunchy vegan coleslaw and dill pickle slices. Enjoy!
