The Ultimate Double-Garlic Artisan Garlic Bread

The secret to a truly spectacular garlic bread is layering textures and garlic profiles. By using a combination of sweet, mellow roasted garlic and punchy, aromatic grated raw garlic, we create a complex, multi-dimensional flavor. Combined with a premium extra virgin olive oil, vegan butter, and fresh herbs, this recipe yields a crispy-edged, soft-centered masterpiece.


Ingredients

The Bread

  • 1 High-Quality French Boule, Ciabatta, or Italian Loaf: Look for a loaf with a sturdy, crackly crust and an open, airy crumb (like the ciabatta or focaccia). Check ingredients to make sure it is vegan.

The Double-Garlic Compound Butter

  • 1 whole head of Garlic (for roasting)
  • 1 tablespoon Olive Oil (for roasting the garlic)
  • ½ cup (1 stick) Premium Vegan Butter, softened to room temperature (such as Miyoko’s or Country Crock Plant Butter)
  • 3 cloves Raw Garlic, very finely grated or microplaned (for that fresh, aromatic bite)
  • ¼ cup Extra Virgin Olive Oil (helps the bread crisp up)
  • 2 tablespoons Nutritional Yeast or Vegan Parmesan (for a professional, savory, umami depth)
  • 3 tablespoons Fresh Italian Parsley, finely chopped
  • 1 tablespoon Fresh Oregano, finely minced
  • ½ teaspoon Sea Salt and Freshly Cracked Black Pepper, to taste

Instructions

1. Roast the Garlic Base

  1. Preheat your oven to 400°F (204°C).
  2. Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it tightly in aluminum foil, and roast for 35–40 minutes until the cloves are completely soft and caramelized.
  3. Let it cool, then squeeze the jammy, sweet roasted garlic cloves out of their skins into a small bowl. Mash them into a smooth paste using a fork.

2. Whip the Ultimate Compound Butter

  1. In the bowl with your mashed roasted garlic, add the softened vegan butter, raw grated garlic, extra virgin olive oil, nutritional yeast (or vegan parmesan), chopped parsley, minced oregano, sea salt, and black pepper.
  2. Using a spatula or fork, whip the mixture vigorously until it is completely smooth, creamy, and pale green from the herbs.

Why this works: The roasted garlic brings a sweet, caramelized, buttery depth, while the raw grated garlic adds a bright, sharp, classic garlic aroma. They balance each other perfectly.


3. The "Hasselback" Slice & Slather

  1. Turn your oven down to 375°F (190°C).
  2. Place your bread on a cutting board. Using a serrated knife, cut diagonal slices into the loaf about 1-inch apart, but do not cut all the way through the bottom crust. Leave the bottom crust intact so the loaf stays together as one beautiful unit.
  3. Using a butter knife or offset spatula, generously slather the garlic-herb butter between every single slice. Use any remaining butter to coat the very top and sides of the loaf.

4. The Foil Wrap and Bake

  1. Wrap the entire buttered loaf snugly in aluminum foil. This traps the steam inside, allowing the garlic butter to melt deeply into the center without drying out the bread.
  2. Bake the wrapped loaf for 15 minutes.

5. The Crisping Phase (Crucial for Texture)

  1. Carefully open the top of the foil, exposing the golden top of the bread.
  2. Return the open loaf to the oven for an additional 5 to 8 minutes, or until the edges of the crust are crisp and the top is slightly bubbling and golden brown.
  3. Slice through the bottom crusts completely and serve immediately while steaming hot! Enjoy!
