Thick-Cut Vegan French Toast

This recipe uses a simple blend of plant milk and flour or liquid plant egg, spiced with cinnamon, to create a silky batter that coats thick bread perfectly.

INGREDIENTS

A. Option 1: Flour Batter

  • 1 1/2 cups Non-Dairy Milk (Almond or Oat recommended for richness)
  • 1/4 cup All-Purpose Flour
  • 2 tbsp Organic Raw Cane Sugar
  • 2 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg (optional, for deeper flavor)
  • Pinch of Turmeric (optional, for a light yellow "egg" color)
  • 1/4 tsp Salt

B. Option 2 (Rich & Custardy): Just Egg Plant-Based Liquid Egg

Replace the flour and turmeric with 1/2 cup "Just Egg" Plant-Based Liquid Egg. Keep the non-dairy milk (reduce to 1 cup), sugar, vanilla, cinnamon, nutmeg, and salt.

C. Bread & Cooking

  • 8 slices Thick-Cut Bread (Challah, Brioche, or Texas Toast style, day-old is best - check ingredient list for animal products)  
  • 1-2 tbsp Vegan Butter or Oil (for cooking)

D. Serving Suggestions

  • Maple Syrup
  • Fresh Berries
  • Powdered Sugar

INSTRUCTIONS

STEP 1: PREPARE THE BATTER

  • Whisk Dry Ingredients: In a shallow dish (like a pie plate or casserole dish), whisk together the flour, sugar, cinnamon, nutmeg, turmeric (if using), and salt.

  • Add Wet Ingredients: Slowly whisk in the non-dairy milk and vanilla extract until the batter is smooth and lump-free. The consistency should be thin, but thick enough to coat the bread.

  • For Option 2: Whisk the "Just Egg" liquid with the non-dairy milk, sugar, vanilla, and spices until well combined. This version will have a naturally golden "egg" color.
STEP 2: SOAK AND COOK
  1. Heat Griddle: Heat a large non-stick skillet or griddle over medium heat. Add a teaspoon of vegan butter or oil to coat the surface.
  2. Soak Bread: Working one slice at a time, gently dip the thick-cut bread into the batter. Turn to coat both sides completely. Do not soak for too long (10-15 seconds per side is enough) or the bread will fall apart.
  3. Cook: Place the soaked bread directly onto the hot griddle. Cook for 3-4 minutes per side, or until the exterior is golden brown and crispy and the inside is cooked through. Add more butter to the griddle as needed for subsequent batches.
  4. Serve: Transfer the finished slices to plates. Dust immediately with powdered sugar and serve hot with maple syrup and fresh berries. Enjoy!
