Fluffy Vegan Dinner Rolls

These rolls are soft, tender, and slightly sweet, making them perfect for soaking up gravy or simply spreading with vegan butter.

INGREDIENTS

Dough

  • 1 1/2 cups Plant-based Milk (lukewarm, about 105°F-115°F)
  • 2 1/4 tsp Active Dry Yeast (one standard packet)
  • 1/4 cup Organic Cane Sugar
  • 1/4 cup Vegan Butter, melted
  • 1 tsp Salt
  • 4 cups All-Purpose Flour, plus more for dusting

Finishing

  • 2 tbsp Vegan Butter, melted (for brushing after baking)

INSTRUCTIONS

STEP 1: ACTIVATE YEAST

  1. Warm Milk: Warm the plant-based milk until it is lukewarm (a quick microwave for 30-45 seconds should work). Do not let it get hot, or it will kill the yeast.
  2. Activate: Pour the lukewarm milk into a large mixing bowl. Sprinkle the yeast and 1 tablespoon of the sugar over the top. Let stand for 5-10 minutes until foamy.

STEP 2: MIX THE DOUGH

  1. Add Butter and Seasoning: Whisk in the remaining sugar, melted vegan butter, and salt into the yeast mixture.
  2. Add Flour: Gradually add the flour, 1 cup at a time, mixing with a wooden spoon or dough hook until a shaggy dough forms.
  3. Knead: Turn the dough out onto a lightly floured surface. Knead for 6-8 minutes until the dough is smooth, elastic, and no longer sticky.

STEP 3: FIRST RISE

  1. Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a kitchen towel.
  2. Proof: Let the dough rise in a warm, draft-free place for 1 to 1.5 hours, or until doubled in size.

STEP 4: SHAPE, SECOND RISE, AND BAKE

  1. Punch Down & Divide: Gently punch down the dough to release the air. Turn it out and divide it into 12-14 equal pieces (weighing them ensures uniform size).
  2. Shape Rolls: Roll each piece into a smooth, tight ball.
  3. Arrange: Place the rolls closely together in a lightly greased 9x13 inch baking dish.
  4. Second Rise: Cover the dish lightly and let the rolls rise again in a warm spot for 30-45 minutes, or until they look puffy and have nearly doubled in size.
  5. Preheat & Bake: Preheat oven to 375°F (190°C). Bake the rolls for 18-22 minutes, or until they are golden brown on top.
  6. Brush: Immediately after removing them from the oven, brush the tops of the rolls generously with the 2 Tbsp of melted vegan butter.
  7. Serve: Serve warm. Enjoy!
