Mexican Roasted Corn and Black Bean Medley
This warm side dish is packed with roasted flavor, utilizing a full spectrum of colors from the bell peppers.
INGREDIENTS
A. Roasting Vegetables
- 3 cups corn kernels (fresh or frozen/thawed)
- 1 red bell pepper, diced
- 1 yellow bell bepper, diced
- 1 orange bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 red onion, diced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
B. Complementary Ingredients & Seasoning
- 1 (15 oz) can black beans, rinsed and drained
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice (from 1-2 limes)
- 2 cloves garlic, minced
- 1 Tbsp chili powder (Mexican style)
- 1 tsp ground cumin
- 1/4 tsp smoked paprika
- Pinch of cayenne pepper (optional, for heat)
C. Optional Flavor Boosts
- 1/2 cup crumbled vegan Feta or vegan Cotija Cheese (ensure soy-free)
- 1 medium avocado, diced (for richness)
INSTRUCTIONS
STEP 1: Roast the Vegetables
- Preheat: Preheat your oven to 400°F (200°C).
- Toss: On a large baking sheet, spread the corn, all diced bell peppers, and diced red onion. Drizzle with 2 Tbsp of olive oil, salt, and black pepper. Toss to ensure everything is evenly coated.
- Roast: Roast for 15-20 minutes, stirring halfway through, until the vegetables are tender, slightly shriveled, and the corn kernels are beginning to brown or slightly char at the edges.
STEP 2: SEASON AND COMBINE
- Warm: While the vegetables are roasting, place the rinsed and drained black beans in a large bowl.
- Add Aromatics: Remove the baking sheet from the oven and immediately scrape the hot roasted vegetables into the bowl with the black beans, then add the fresh lime juice, minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Toss everything gently to combine and allow the heat of the roasted vegetables to bloom the spices.
STEP 3: FINISH AND SERVE
- Finish: Stir in the fresh cilantro and any extra salt or pepper needed.
- Serve: Transfer the mixture to a serving dish. If using, top with the diced avocado and sprinkle with crumbled vegan cheese. Serve warm or at room temperature. Enjoy!
