🍬 Salted Caramel Dream Hot Cocoa (Vegan & Soy-Free)

This hot cocoa features a homemade, soy-free vegan caramel sauce mixed into a rich chocolate base.

INGREDIENTS

A. Quick Vegan Salted Caramel Sauce (Soy-Free)

  • 1/2 cup Raw Cane Sugar or Coconut Sugar
  • 2 Tbsp Water
  • 1/4 cup Full-Fat Canned Coconut Cream (the thick part from the top of a chilled can) or  Soy-Free Plant Cream
  • 1 Tbsp Vegan Butter (soy-free brand, e.g., Miyoko's Kitchen or Earth Balance Soy-Free)
  • 1/4 tsp Sea Salt (plus more for garnish)

B. Decadent Cocoa Base

  • 1/4 cup Unsweetened Cocoa Powder (Dutch-processed for best color and flavor)
  • 1/2 tsp Espresso Powder or Instant Coffee Granules
  • 1/4 tsp Salt
  • 3 cups Soy-Free Plant Milk (e.g., Oat or Almond milk)
  • 1/2 tsp Pure Vanilla Extract
  • 1 oz (about 2 Tbsp) Vegan Dark Chocolate, chopped (ensure soy-free)

INSTRUCTIONS

STEP 1: MAKE THE CARAMEL SAUCE

  1. Melt Sugar: In a small, heavy-bottomed saucepan, combine the sugar and 2 tablespoons of water. Place over medium heat. Do not stir initially. Swirl the pan occasionally until the sugar melts completely and turns a deep amber color (about 5-8 minutes).
  2. Add Cream: Carefully remove the pan from the heat and immediately whisk in the coconut cream and vegan butter. The mixture will bubble vigorously. Whisk until smooth.
  3. Season: Stir in the sea salt. Set aside. (This makes more than you need for the cocoa; the rest can be stored in the fridge.)

STEP 2: MAKE THE COCOA

  1. Whisk Dry Ingredients: In a medium saucepan, whisk together the cocoa powder, espresso powder, and 1/4 tsp salt.
  2. Add Liquid: Pour in the plant milk and whisk until the dry ingredients are fully incorporated and there are no lumps.
  3. Heat: Place the saucepan over medium heat and bring to a gentle simmer, stirring frequently (do not boil). Simmer for 3 minutes to develop the cocoa flavor.
  4. Enrich: Remove from the heat. Stir in the chopped dark chocolate and vanilla extract until completely melted and smooth.

STEP 3: COMBINE AND SERVE

  1. Add Caramel: Stir 3 to 4 tablespoons of the finished Salted Caramel Sauce directly into the cocoa mixture until well combined. Taste and add more caramel if desired.
  2. Pour & Garnish: Pour the cocoa into mugs. Drizzle the top with extra Salted Caramel Sauce and sprinkle with a tiny pinch of sea salt for garnish. Enjoy!
