Decadent Vegan & Soy-Free Peanut Butter Pie
A truly decadent and rich treat, this pie is crafted entirely from plant-based ingredients. With a sweet, no-bake Medjool date crust and a luxuriously smooth peanut butter filling, it's a perfect dessert.

Ingredients:
- For the Crust:
- 1.5 cups pitted Medjool dates
- 1 cup rolled oats
- 1 cup almonds
- 1/4 teaspoon salt
- For the Filling:
- 1.5 cups raw cashews, soaked in hot water for at least 30 minutes, then drained
- 1 can (13.5 oz) full-fat coconut cream, chilled overnight in the refrigerator (do not shake)
- 1 cup creamy natural peanut butter
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- Make the crust: In a food processor, combine the dates, oats, almonds, and salt. Process until the mixture is finely crumbled and sticks together when you press it between your fingers.
- Press the crust: Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Place the crust in the refrigerator while you prepare the filling.
- Prepare the filling: Open the chilled can of coconut cream without shaking it. Scoop out the thick, solidified cream from the top, leaving the liquid at the bottom of the can (discard or save for another use). Place the coconut cream into a high-powered blender along with the soaked cashews, peanut butter, maple syrup, vanilla extract, and salt.
- Blend until smooth: Blend on high speed until the filling is completely smooth and creamy. This may take a few minutes. Scrape down the sides of the blender as needed to ensure a uniform consistency.
- Assemble the pie: Pour the filling into the prepared crust and use a spatula to smooth the top.
- Chill and serve: Refrigerate the pie for at least 4 hours, or preferably overnight, to allow the filling to set completely. Before serving, you can garnish it with a sprinkle of roasted peanuts and a few small pieces of Medjool dates.
