This recipe uses a combination of cashews and vegan cream cheese for an incredibly smooth and rich texture that rivals traditional cheesecake.

Ingredients:
For the Crust:

- 2 cups raw cashews, soaked in hot water for at least 30 minutes (or overnight in cold water)
- 1 (8 ounce) package (about 1 cup) vegan cream cheese, softened to room temperature (Tofutti or Kite Hill often work well)
- ¾ cup granulated sugar
- ½ cup full-fat canned coconut milk (refrigerated overnight, use only the thick solid cream)
- ¼ cup fresh lemon juice
- 2 teaspoons vanilla extract
- Pinch of salt

Instructions:
1. Prepare the Crust:
