Vegan Spring Onion and Herb Cornbread

Ingredients:

  • 1 Tbsp Vegetable Oil
  • 1 bunch Spring Onions, trimmed and sliced
  • 2 cups Yellow Sweet Corn (defrosted and patted dry if frozen)
  • ½ cup chopped fresh Spring Herbs, such as Chives, Parsley and Tarragon
  • ¼ tsp Kosher Salt
  • 2 Tbsp Ground Flaxseed or Chia Seeds
  • 6 Tbsp Water (to make a flax/chia "egg")
  • ½ cup Vegan Butter, melted
  • 1 cup Water or Plant-Based Milk (unsweetened)
  • 1 package Vegan Golden Cornbread Mix (check ingredients carefully; many are accidentally vegan, or use a reliable vegan brand like Pamela's Products, available on Amazon.com)
  • 3 oz crumbled Vegan Feta or other non-dairy crumbled cheese alternative

Instructions:

  1. Preheat your oven according to the instructions on your vegan cornbread mix. Grease an appropriate sized baking dish.
  2. Heat the vegetable oil in a skillet over medium heat. Add the sliced spring onions and cook until softened, about 3-5 minutes.
  3. In a large mixing bowl, prepare your flax/chia "egg" by whisking together the ground flaxseed or chia seeds with the 6 tablespoons of water. Let it sit for 5-10 minutes to thicken.
  4. Add the defrosted and dried corn, softened spring onions, chopped fresh herbs, and salt to the bowl with the flax/chia "egg". Stir to combine.
