Vegan Sorbet
Cool down with this refreshing sorbet, a delightful and natural treat.
Yields: About 4 servings
Prep time: 15 minutes
Freeze time: 2-3 hours
Ingredients:
- 4 cups fresh or frozen fruit (berries, mango, peaches, etc.)
- 1/2 cup granulated sugar (or agave syrup, maple syrup, or other sweetener, to taste)
- 1/4 cup water
- 2 tablespoons lemon or lime juice
Equipment:
- Blender or food processor
- Freezer-safe container
- Ice cream maker (optional, but recommended)
Instructions
- Make a syrup: In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is dissolved. Remove from heat and let cool completely.
- Blend fruit: If using fresh fruit, wash and cut it into chunks. If using frozen fruit, let it thaw slightly. Place the fruit in a blender or food processor and blend until smooth.
- Combine: Pour the cooled syrup and lemon or lime juice into the blender with the fruit puree. Blend until everything is well combined.
- Churn (Recommended): Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This will create the smoothest and creamiest sorbet.
- Freeze (If Not Using Ice Cream Maker): Pour the mixture into a freezer-safe container. Freeze for at least 2-3 hours, or until firm. For a smoother texture, stir the mixture every 30 minutes during the first hour of freezing.
- Serve: Let the sorbet sit at room temperature for a few minutes before scooping and serving.
Tips:
- Use ripe or slightly overripe fruit for the best flavor.
- Adjust the amount of sweetener to your taste, depending on the sweetness of the fruit.
- Add a pinch of salt to enhance the fruit flavors.
- For a more complex flavor, add fresh mint, basil, or ginger to the blender with the fruit.
- If you don't have an ice cream maker, you may need to blend the sorbet again after it has partially frozen to break up any ice crystals.
