Vegan Frozen Yogurt

Enjoying a cool, refreshing treat as temperatures rise, is a timeless pleasure. This recipe offers a delightful vegan twist on frozen yogurt, using creamy coconut milk and the natural sweetness of maple syrup and/or fruit.


Vegan Frozen Yogurt

Yields: About 4 servings

Prep time: 10 minutes

Freeze time: 2-3 hours

Ingredients:

  • 2 cans (13.5 oz each) full-fat coconut milk, refrigerated overnight
  • 1/2 cup maple syrup, to taste (or pure cane sugar) 
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • Optional: 1 cup fruit (berries, mango, etc.) or 1/4 cup nut butter

Equipment:

  • Blender
  • Freezer-safe container
  • Ice cream maker (optional, but recommended)

Instructions

  1. Chill: Ensure your coconut milk has been refrigerated overnight. This helps separate the creamy solid part from the liquid.
  2. Blend: Scoop out the thick, solid part of the coconut milk into a blender. Discard the remaining liquid or save it for smoothies. Add sugar (or maple syrup), lemon juice, and vanilla extract. Blend until completely smooth and creamy.
  3. Optional additions: Add fruit or nut butter and blend until well combined.
  4. Churn (Recommended): Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This will result in the creamiest texture.
  5. Freeze (If Not Using Ice Cream Maker): If you don't have an ice cream maker, pour the mixture into a freezer-safe container. Freeze for 2-3 hours, stirring every 30 minutes to prevent ice crystals from forming. The texture won't be as smooth as with an ice cream maker, but it will still be tasty.
  6. Serve: Once the frozen yogurt has reached your desired consistency, it's ready to serve! Enjoy it on its own, with toppings, or as a base for sundaes.

Tips:

  • For a sweeter frozen yogurt, add more sugar or maple syrup to taste.
  • Feel free to experiment with different fruit combinations, such as strawberry, mango, or mixed berries.
  • A pinch of salt can enhance the flavors.
