Ingredients:
- 2 cans (13.5 oz each) full-fat coconut milk, refrigerated overnight
- 1/2 cup maple syrup, to taste (or pure cane sugar)
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- Optional: 1 cup fruit (berries, mango, etc.) or 1/4 cup nut butter
Equipment:
- Blender
- Freezer-safe container
- Ice cream maker (optional, but recommended)
Instructions
- Chill: Ensure your coconut milk has been refrigerated overnight. This helps separate the creamy solid part from the liquid.
- Blend: Scoop out the thick, solid part of the coconut milk into a blender. Discard the remaining liquid or save it for smoothies. Add sugar (or maple syrup), lemon juice, and vanilla extract. Blend until completely smooth and creamy.
- Optional additions: Add fruit or nut butter and blend until well combined.
- Churn (Recommended): Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This will result in the creamiest texture.
- Freeze (If Not Using Ice Cream Maker): If you don't have an ice cream maker, pour the mixture into a freezer-safe container. Freeze for 2-3 hours, stirring every 30 minutes to prevent ice crystals from forming. The texture won't be as smooth as with an ice cream maker, but it will still be tasty.
