Gooey Vegan Agave "Honey" Buns


These soft, sweet, and sticky buns use agave nectar to achieve the classic "honey" flavor, making them 100% vegan.

INGREDIENTS

A. Sweet Dough

  • 1 1/2 cups Non-Dairy Milk (warm, approx. 105°F)
  • 1/4 cup Granulated Sugar
  • 2 tsp Instant or Active Dry Yeast
  • 1/2 cup Vegan Butter, melted and cooled
  • 2 Tbsp Agave Nectar (or vegan honey substitute)
  • 4 to 4 1/2 cups All-Purpose Flour (plus more for kneading)
  • 1 tsp Fine Sea Salt

B. Agave-Cinnamon Filling

  • 1/3 cup Vegan Butter, softened
  • 1/2 cup Brown Sugar, packed
  • 2 tsp Ground Cinnamon
  • 2 Tbsp Agave Nectar

C. Gooey Glaze

  • 2 cups Powdered Sugar, sifted
  • 2 Tbsp Vegan Butter, melted
  • 4 Tbsp Agave Nectar
  • 2-4 Tbsp Non-Dairy Milk (to adjust consistency)

INSTRUCTIONS

PHASE 1: MAKE THE DOUGH

  1. Activate Yeast: In a large bowl, whisk together the warm non-dairy milk, granulated sugar, and yeast. Let sit for 5-10 minutes until frothy.
  2. Mix Dough: Add the cooled melted vegan butter, agave, and salt. Gradually add the flour, mixing until a shaggy dough forms.
  3. Knead & Rise: Turn the dough onto a floured surface. Knead for 5-7 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place for 1.5 to 2 hours, or until doubled.

PHASE 2: FILL, ROLL, AND SHAPE

  1. Prepare Filling: While the dough rises, combine the softened vegan butter, brown sugar, cinnamon, and agave nectar for the filling. Mix until creamy.
  2. Roll Dough: Gently punch down the risen dough. Roll it out into a large rectangle, approximately 12 inches by 18 inches.
  3. Spread and Roll: Evenly spread the filling over the entire dough surface. Tightly roll the dough into a log, starting from the long side.
  4. Cut & Second Rise: Cut the log into 12 equal slices. Place the slices cut-side down in a greased 9x13 inch baking dish. Cover and let them rise for 30 minutes. Preheat oven to 350°F (175°C) during the last 10 minutes.

PHASE 3: BAKE AND GLAZE

  1. Bake: Bake for 22-25 minutes, or until the tops are light golden brown.
  2. Make Glaze: While the buns bake, whisk together the sifted powdered sugar, melted vegan butter, and agave nectar. Add non-dairy milk 1 tablespoon at a time until the glaze is smooth and pourable.
  3. Glaze: As soon as the buns come out of the oven, generously pour the glaze over the top, allowing it to melt into the sticky filling. Serve warm. Enjoy!
